Here’s a dinner idea that I think I’ll be making more of this summer. Pizza night is always welcomed around here, especially when you get to make your own. The kids made pepperoni and cheese pizzas and I took mine up a notch.
My local pizza place makes a salad pizza that I get most of the times that we visit there. You start with a cooked pizza crust and a light sprinkle of Parmesan cheese. And then you can make a custom salad to put on top of the pizza crust. I usually get arugula, with a vinaigrette and a sprinkle of parmesan cheese. I thought I would make my own version tonight at home.

Pizza Salad, makes 1
A hot oven, set at 450 degrees
1 Boboli Pizza Crust, personal size (feel free to make your own from scratch. I just didn’t have it in me to do that tonight. Because, lazy.)
2 tbsp of shredded parmesan cheese
2 large handfuls of arugula greens
2 slices of halloumi cheese, fried (I buy this at Trader Joe’s and I’m in love!)
1/2 avocado, sliced
1 tbsp olive oil
1 tbsp red wine vinegar
A splash of balsamic vinegar
Sprinkle of black sesame seeds (I’m obsessed. It makes food look pretty.)
Spread a thin layer of olive oil onto your crust and then sprinkle with parmesan cheese. Pop it into the oven at 450 degrees for 3 minutes.
While crust is cooking, take your arugula, mix in parmesan, olive oil and red wine vinegar. Toss well to combine.
When pizza crust is done, take out of oven, and put the salad on top of crust.
Top with avocado slices, fried halloumi cheese and sesame seeds. Add a splash of balsamic on top.
Chow down and enjoy!
