Oh summer, and the livin’ is easy and yummy! I picked up some cherries at the market a couple of days ago and set some aside to make a little jam. It’s super easy and quick and spreading it on my bagel this morning was a great idea! How about on top of vanilla bean ice cream? Or on homemade fresh scones? Or pancakes? Put it on allllll the carbs. Or just enjoy it by the spoonful….it’s that good.
Because sharing is caring, here’s the recipe I put together:
Cherry Chia Jam / makes about 1-1 1/2 cup of jam
2 cups of pitted cherries (or you can use frozen if you’re not into pitting the fresh ones. Trader Joe’s has frozen ones that are excellent.)
1/4 cup water
A squeeze of agave (maybe about 1 tbsp) for sweetness. Completely optional.
1 tbsp of chia seeds
Put the cherries, water and agave in a small saucepan on the stove. Turn heat onto medium high and let the ingredients heat up a bit until it gets a little juicy. Take a muddler (or the back of the spoon) and smash the cherries up until it’s a pulpy mess. Let simmer for 2 minutes. Turn off heat and let sit for 5 minutes. Take off stove and add chia seeds. Mix until well combined. Put in a container and refrigerate. I let mine sit overnight and in the morning it was all yummy and jammy like. The chia seeds did that. Spread it on all the things. Enjoy!
